Function
Distilled Monoglycerides are used to extend the shelf life and acts as an emulsifier in baked goods, gum, oils, frozen desserts, dairy products and other processed foods. Distilled Monoglycerides are used as an emulsifier in icing, margarine, shortening, and cream fillings.

Distilled Monoglycerides are used in plastics, cosmetic products, in pharmaceutical products, and industrial packing material.
Health Effects
Distilled Monoglycerides are commonly created from animal fats since it is cheaper than producing monoglycerides derived from vegetable sources and carries the same health risks associated with consuming any saturated fats.
Origins
Distilled Monoglycerides are processed by taking a raw mixture of monoglycerides which may come from meat or vegetable sources and sending it through a molecular distillation process. The molecular distillation process is a high vacuum process that takes the raw mixture of monoglycerides and evaporates the material causing vapors and then pushes those vapors through a condenser under high vacuum. The resulting material either a powder or crystal depending on application is known as distilled monoglycerides. Distilled Monoglycerides may be labeled as fat-free due to a law passed by congress, even though they are derived from fat and contain saturated fats.
