Function

Tetrasodium pyrophosphate is also called sodium pyrophosphate, tetrasodium phosphate or TSPP. It is a colorless, transparent, crystalline chemical compound used as a food additive. It is commonly found in chicken nuggets, marshmallows, puddings, crab meat, imitation crab meat, canned tuna, soy-based meat alternatives and baking powders. It acts as a pH buffer to maintain acidity levels in foods, and also promotes the binding of water to proteins.

Other Use and Industries

Tetrasodium pyrophosphate is used in cat foods and treats to increase its palatability. In toothpaste and dental floss, tetrasodium pyrophosphate acts as a tarter control agent. It is also used in household detergents to prevent deposits on clothing.

Health Effects

Reports have shown that tetrasodium pyrophosphate is twice as toxic as table salt when ingested orally. It is a source of phosphorous as a nutrient. Because its production methods and side effects are relatively unknown, consumption should be avoided.

Origins

Tetrasodium pyrophosphate contains pyrophosphate ion and sodium cation. Production of the chemical is relatively unknown, but one method utilizes the mixing of sodium tripolyphosphate and a sodium salt, and then calcining the mixture.
